Unique Selling Point: Crayfish is the commonest animal protein ingredient used in cooking food for the teeming population in Africa. Climatic changes and over dependency on crayfish have adversely reduced the availability of this specie thereby making it too costly for the poor mass in African. Given that food insecurity is prevalent in African, the use of insects in this region, where they are already being consumed, although not at a nutritionally significant level, should be evaluated to serve as an alternative animal protein source, in particular. Incorporation of African edible termites as food protein ingredients in popular, staple foods to fight food insecurity should be considered.
